Dedicated and focused pastry chef with 10+ years of industry experience spanning several roles in both front of house and back of house in high volume restaurants and cafes. In my previous role as sous at Quad I was primarily responsible for handling cabinet and baking production due to my particular skillset. This included training new staff when required, developing new recipes, costing, and substantial recipe testing. I also worked on hotline during service when required (during rushes) to support the head chef, and was able to switch seamlessly in and out between sections. Recipe testing and menu development are excellent creative outlets for me, and I particularly enjoy designing signature menu items that spark interest among customers and create a point of discussion, one such product happened to be the cheese scones which, happily, gained a fan following during my time at Quad and are always in high demand. Having spent time in high volume production-style corporate kitchens, cafes, and clubs my experience lies in western style cooking, with pastry, baking, and desserts being my passions and area of expertise.
